Yes the hitch would work for your 2002 GMC 2500, though you would require brackets to complete the install. We'd recommend the Curt 16418 5th wheel brackets.
One point to note, given the short box, you will have less cab clearance for turns so many will opt for a 5th wheel hitch with a slider, either it be a manual or auto slider.
