The Torklift Cannon Receiver Extension - 42 part E1642 is made for a 3" receiver (opening) so it wouldn't work in your case if you have a 2.5" receiver. And you're correct that it's not adjustable like the Reese and Curt alternatives.
You can go to Reese as an option, though we presently don't have stock, below is the Curt alternative as another option:
